This is a very quick, yummy recipe that I invented one day. It’s been one of our favourites for years now.
As a busy mum I know that when you can’t be bothered to cook, a quick meal is usually something out of a tin or the freezer.
I wanted a quick meal that didn’t take a great amount of effort but was yummy and filling so I came up with this dish. This recipe feeds all 5 of us.
1 large onion, chopped
2 tablespoon olive oil
1-2 garlic cloves, crushed (depending on your preference)
2 tins chopped tomatoes
Penne or Conchiglie pasta
Unsmoked 200g pack (8 rashers) medallion bacon
Put the pasta on.
Put the onion, garlic and olive oil in a saucepan and cook on medium heat until softened. Add the tin tomatoes and leave to simmer for 5 mins.
Chop the bacon medallions into as big/small pieces as you want and fry in a little oil until cooked (I think it tastes better when it’s just cooked and not crispy) turn off the sauce mix and blend it all until it’s a smooth, thick sauce (you can leave it as it is but I never do)
Add the sauce to the bacon.
You can put it all together and serve but I put the pasta in bowls then put the bacon and sauce on top 🙂
I usually make a batch of sauce and freeze so it’s even quicker. And if you want a really quick dinner that’s a bit cheaper, skip the bacon 🙂
